I was browsing around on the internet last night and came across Naturally Ella, a fantastic food blog (I bookmarked about twenty recipes right off the bat) and decided her recipe for Oatmeal Honey Bread was too good to wait for. I was definitely right; making it was my best decision all week.
You can find the recipe when you follow the link– the only thing I had to do was add a LOT more flour than it called for; the dough was really wet like you can see in the pre-rising picture. I felt like I had been adding tons of flour and finally stopped, but I worried that the dough was still too wet. The bread turned out great, but I’ll still probably add even more flour next time. And try to keep track of the measurements rather than just tossing it everywhere ;)
It came out beautifully– top turned a little dark so I may make a foil tent for part of the baking time next time (which may be sooner than I think; the family has almost polished it off and are asking for another loaf asap.)
Seriously though, this bread is easy, rich enough to make good toast with jam/apple butter for breakfast, but not such a strong honey flavor that it’s not fantastic on a sandwich. This recipe is a winner and one I’ll come back to again and again.
